2 cups raw nuts of your choice
2 tbsp soy sauce, tamari, Bragg’s amino etc
Optional: 1 tsp or to taste spices or seasonings such as pepper, garlic or onion powder, cayenne pepper, paprika, or one of your favourite blends.
Preheat your oven to 300°F.
Toss the raw nuts in a bowl with liquid seasoning and any extra spices. Stir a few times until the sauce has mostly absorbed into the nuts, about 5 minutes. Don’t soak them in too much liquid for too long, or they won’t roast up as crisply. Spread the nuts out into a single layer on a baking sheet.
Bake for 15 minutes and then remove to stir the nuts quickly and return to the oven for an additional 5-15 minutes, depending on the size of the nut and your toasting preference. Sliced, chopped, and smaller nuts such as pistachios roast in approximately 20-25 minutes, whole and larger nuts approximately 30. Check frequently after 15 minutes and stir every five minutes for the perfect roast!
Remove from oven, stir again, and allow to fully cool to room temperature before storing in an airtight container.
