Ingredients:

15 Sun Dried Tomatoes, halves (about 1 cup)
½ cup Walnuts or Hazelnuts
1 handful Parsley, chopped, fresh
2-3 tbsp Olive Oil, raw, virgin
Dash of salt to taste if preferred

Tip: This recipe can be made with or without the olive oil. To use as a paste, leave out the oil. With the addition of olive oil you can dig into this as a tasty dip!

Directions:

Makes about 1 cup paste.

Soften the tomato halves in hot water and let sit for about 15 minutes. Drain the liquid.

Tip: No need to waste the tomato water. Reserve the liquid for future use in soups or sauces!

Add the softened tomatoes, walnuts (or hazelnuts) and parsley to your food processor and blend until it becomes a thick paste.

Transfer to a clean jar for use in your favourite recipe or serve in a dish by drizzling olive oil over top and use as a tasty dip or spread!
