1 cup All-purpose flour 1 tsp Baking soda 1 cup Rolled oats 1 cup Brown sugar 1/2 tsp Salt 1/2 cup Butter, melted 1 Egg, beaten 1 tsp Vanilla extract 1 cup Golden figs, diced
Preheat your oven to 350°F.
Whisk together flour and baking soda, then mix in rolled oats, sugar and salt. In a separate smaller bowl, combine all wet ingredients. Add the wet ingredients to the dry ingredients and mix until thoroughly combined, then stir in the diced figs.
Roll into approximately 1.5″ balls and place about 3″ apart on an oiled or lined cookie sheet.
Bake at 350°F for approximately 10 minutes, until the edges of the cookies just begin to brown. After removing them from the oven, allow them to cool for a few minutes on the cookie sheet before transferring the cookies to a wire rack to cool fully.
Makes about 25 cookies.
