Ingredients:

100g Peanuts, roasted
50g Almonds, raw
50g Walnuts, raw

50g Pumpkin Seeds, raw
30g Sunflower Seeds, raw
20g Chia Seeds, raw
10g Sesame Seeds, raw
10g Flax Seeds, raw

50g Juice Sweetened Cranberries
50g Figs, chopped or snipped
50g Apricots, chopped or snipped
50g Dates, chopped or snipped, and soaked in 3-4 tbsp of just-boiled water

A generous amount of cinnamon (or any spice blends you prefer, like ground cardamom, cloves, or star anise)

Directions:

Start by chopping or snipping your dates. Once done, cover them with hot water and let them sit for about 15 minutes. After this, mash or blend the dates and water into a smooth, paste-like consistency.

In a large bowl, combine all your ingredients. Add the date paste and mix thoroughly, ensuring every ingredient is coated. Let the mixture rest for 5-10 minutes to allow everything to blend together.

Portion the mixture into a muffin tin or silicone bar mold. Press each portion firmly to compact them.

Bake at 150°C (350°F) for 15 minutes.

Once baked, turn the energy bites out onto a plate and let them cool completely. This is important, as they will fall apart if you try to handle them before cooling.
